Instructions
  1. Preheat oven to 180 degrees (Celcius).
  2. Grease and line a 30cm pie dish with shortcrust pastry and blind bake for 15 minutes.
  3. Finely chop onion and bacon and fry in oil over a medium heat until onion is golden. Allow to cool slightly.
  4. Grate zucchini.
  5. In a large bowl, whisk eggs. Add cream and mustard and whisk again. Add bacon and onion mix and cheese and mix. Season with salt and pepper.
  6. Pour into pastry lined dish and bake in oven until firm (around 30 minutes). Serve with fresh rocket or a side salad.
Thermomix Method
  1. Preheat oven to 180 degrees (Celcius).
  2. Grease and line a 30cm pie dish with shortcrust pastry and blind bake for 15 minutes.
  3. Place onion (cut in half) in Thermomix bowl and process speed 4/ 5 seconds. Add bacon (roughly chopped) and process speed 4/5 seconds. Add oil and cook 2 mins/90 degrees/speed 1
  4. Add zucchini (roughly chopped) and process speed 4/4 seconds
  5. Add eggs, cream, mustard and cheese to Thermomix bowl. Season with salt and pepper. Process on reverse/speed 4/20 seconds.
  6. Pour into pastry lined dish and bake in oven until firm (around 30 minutes). Serve with fresh rocket or a side salad.
