I love curries and hot food but always struggle trying to find a dish that is suitable for children.
This is a mild chicken curry packed with flavour and sneaky vegetables. I like to give adults an option of adding a little of our
to their own bowl to get some extra heat. chilli chutney
Yummy (Family Friendly) Chicken Curry
A mild but delicious Indian style curry.
Dice onion and sauté in a large pan over medium heat until onion is translucent.
Mince/grate ginger and garlic and add with spices to pan and fry until fragrant.
Add chicken to pan and cook until browned on the outside.
Puree cashews and water with a processor or hand mixer. Add with water and stock paste (or liquid stock) to pan.
Simmer mixture for 25 minutes.
Take off the heat. Mix in yoghurt, lemon juice, spinach and top with coriander and serve with rice or breads.
Place whole spices in main mixer bowl and dry roast 2 min/120 C/speed 1. Cool slightly, mill 1min/speed 10.
Add brown onion and remaining spices. Add oil and saute 3 min/120 C/speed 1.
Add cashews and water and puree 1 min/speed 8.
Add chicken and stock paste to mixer bowl and cook 17 min/100 C/Reverse/Speed 1.
Mix in yoghurt, lemon juice, spinach and top with coriander and serve with rice or breads.
